On each individual blog post page there is a section called "Related Posts" - are there any settings somewhere for this please? I wish this to only show posts from 2 categories or from 5 different tags - NOT to show the dummy demo posts created by the theme.

by default this impossible, this is Related Posts, standard WordPress functionality
