I would like to change the size of the portfolio thumbnails, in particular the height.
When i try to change the height in the console the text doesnt 'scale' with it, so it appears somewhere under the thumbnail.
I would like to change the height of a Portfolio Thumbnail so that the text (and onder content inside the Thumbnail) will scale with it. If it is possible, only with a CSS solution.

Sorry, via CSS it's not possible. You can change in the functions.php, you need to edit:
wp-content/themes/thegem/functions.php
line 1362
