I am curious if there is a way to add additional social media icons or alter one of the choices that I am not using. I understand this would probably be changing out the icon file URL and the name as it appears in the admin panel. If this is not something easily shared by the team, can someone point me to the files that I would need to edit in the child theme please?

At first you need to add your custom icon in the child theme:
Adding your own icons
Then pls. provide the wp-admin and FTP access, I'll add it for you.
