#1 I've installed a Yoast SEO plugin and generated a sitemap. In the generated sitemap, there is https://qolei.org/thegem_pf_item-sitemap.xml How can I change this part "thegem_pf_item" to only "pf_item" or just "pf"

Sorry, in my mind there are no simple way to change it. You can edit file:
/wp-content/plugins/thegem-elements/inc/post-types/portfolios.php
And change there:
register_post_type('thegem_pf_item', $args);But i'm not sure that everything will work, there are a lot of css and checks on this post name in the theme..
