I would like to change the color of the arrows and the names/titles on the testimonials, but can't figure out how to do that.

You can do this in the Theme Options and in the shortcode settings.
That only changes the colors of the arrows, not the testimonial name color which is still a dark turquoise color.
You can change the name color in the Testimonials shortcode.
