Is there a way to have the vertical menu so it is open byb default and not force someone to click the hamburger icon in order to open it?
Also, is there a way to have a photo gallery that has filters in it so that they open up in prettyphoto or any lightbox really? I see the ability to have filters in a portfolio but those force you to go to a portfolio page when you click on them rather than being able to see the photos in a lightbox. This is a photography website so there's no need for a page for each photo just a gallery that can be filtered by categories.

As for the vertical menu issue, I do have the vertical option set which does have a vertical menu but the user is forced to open it with the hamburger icon just to even see the logo of the site which doesn't make much sense. I wanted it to be open by default so the user sees the navigation and logo as they enter the site. Otherwise there would be no branding of the site unless the user opens the menu which is not a good thing for a photographer's site.
Which device are you using? The menu is automatically hidden when the window width is less than 1600 pixels, since if the menu is opened, the screen width will not be enough for the content to be displayed correctly.

I'm using an HP Spectre 360 with a resolution of 3840 x 2160 and it is closed by default. So is your documentation.
Is there a way that I can adjust that number from 1600 to a lower number?
