I'm having real trouble kick starting my web site with TheGem. I've been looking over the demos, but have not found one that fits my vision. So, a few questions:
1) Should I just choose the closest demo and try to adapt it from there, or would I be better off building out a new theme from scratch?
2) If I import a Gem demo, will it automatically take on the characteristics of the settings that I specify in theme options?
3) Also, Let's say I'm not happy with the demo I've downloaded. Is it easy to change, backtrack, or replace it with a different demo?
For the record, I've gone over the "getting started" page in the documentation, but I'm still not feeling very confident moving forward. Hoping that once I get my foot in the door and find some direction, I'll be alright. Any help with that would be much appreciated. Cheers.
1. To speed up the development process I would recommend to choose the closest demo and modify this to your needs, sure. As an alternative, you can use TheGem Blocks to compound your pages from prebuilt page sections, which you can modify and customize as well https://docs.codex-themes.com/article/272-general
2. By importing the demo, you can choose whether you wish to import all style settings (theme options) as well or if you wish to keep your settings (in this case the demo will be imported and your current style settings will be applied automatically).

3. Sure, you can remove the demo content and import another demo. You can also combine different demos and pages from different demos https://docs.codex-themes.com/article/303-importing-demo-content - check the video tutorial.
