I'm setting up a store for a client who is a freelance graphic designer. They want to be able to keep track of their clients and give them the option to pre-order some of their services, specifying a future date when the service could start. Upon completion of the service, my client wants to provide a URL with the deliverables, but these may vary from client to client. My questions are:
1. In your checkout editor, is there any configuration that allows pre-ordering a digital product and then approving the payment without resorting to third-party plugins?
2. Similarly, what setup would work for my client using The Gem Template, as a freelance offering digital services with individual deliverables?
As far as I have understood (please correct me if I am wrong) your client wish to sell digital downloadable products using the WooCommerce. You can check the setup guide (with all possible settings and options) here: https://woocommerce.com/document/digital-downloadable-product-handling/
Regarding the checkout: do I understand correctly that you need to have an additional "date/time" field in the checkout form so that the customers can specify the starting date per each order?

As I have stated in my previous reply, the rest seems to be the standard https://woocommerce.com/document/digital-downloadable-product-handling/ . You customer should use the "downloadable" checkbox by the respective products, but leave "virtual" checkbox unchecked. In this way, after placing the order, your customer will get all the needed data including the date and can manually switch the order status according to the required workflow (authorize payment, process and complete the order). As soon as the order is completed, the downloadable product (link) will be emailed to the customer.

I would recommend to use this plugin https://en-gb.wordpress.org/plugins/woocommerce-checkout-manager/ to include custom fields in the checkout form. You can include the "date" field, which will represent the date to start the work.
