Hi I wanna buil a city listing directory using the GEM car listing template or boat and real estate template.
Can I change these templates to make a city listing directory with various categories related to tourism businesses and so on.

You can take one of the prebuilt listing websites (like real estate listing for example) and use it as a starting point for your city listing website.

If I understand you correctly, you need to reassign the field group that the post belongs to to the post type you want.
