2) Does the file recommended in 1) will fit for most use-cases or how many different versions would you recommand to upload for a THE_GEM project ?
Do you have any possibility to screenshot the .svg FORMAT SETTINGS on your side ? …Just in order to have a comparison basis explaining the setting-choices.

Providing I generate an .svg out of ADOBE ILLUSTRATOR – 2 questions :
1) Does it mean any size options will become irrelevant, as the vector-based format is totally scalable ?
2) Is there any particular specifications to respect when outputing the .svg for THE_GEM ?

1) Yes, if you use an SVG, its size doesn't matter.
2) I can give you an example of one of the logos we use on our demo sites.

Our designers don't use any special customizations, just save the image in SVG format.
