Do I absolutely have to use "product archive" templates for my category pages ?
I would like to add pictures, text etc. on these pages.
Can I use one template for each category page ?

Hi,

if you wish to freely customize the layout of your product category pages including any content elements like pictures, text etc, it would be advisable to use Product Archive templates: https://docs.codex-themes.com/category/192-product-archives-builder

Yes, you can create one unique product archive template per one product category and assign it via the page options of this product category: https://docs.codex-themes.com/article/247-activating-product-archives-template

OK thank you but will it be good for seo ? If the page is recognised as "template" and not a real page....
